Preparing a Whole Fish Recipes

By: Kristen Oliveri

The most important thing about a whole fish recipe is to have the fish gutted and scaled at your fish market. It's too much work to do at home, and it'll save you a lot of time without all of the hassle. Branzino or Italian Sea bass is the perfect fish for cooking in its entirety. It appears on many Italian restaurant menus and can be served to you tableside. Some people prefer to eat the skin, while others peal it away before diving in. Your approach to eating a whole fish is completely up to you.

How to Prepare a Whole Fish Recipes
Start by oiling a dish with extra virgin olive oil. Stuff lemon slices and rosemary into the cavities of the fish. Make a few incisions in the fish and sprinkle salt, pepper, more olive oil and lemon over it.

Broil the fish in the oven. Let the skin get slightly charred and cook for about 15 to 17 minutes. When you see the uncovered bits of the fish look opaque, then you know it's done. When it's cooling, add even more lemon and spices on top before serving.

Alternate Methods For Cooking a Whole Fish
You can cook whole fish by broiling, roasting or even steaming. If you decide to cook mackerel, stick some lemon and fresh garlic into the cavities and cover the fish with some aluminum foil. You can put this right on your grill or barbeque. Cook for about 15 minutes on each side. If you want to roast the fish in the oven, try raising the temperature to about 500 degrees. Then roast the fish for about 17 to 20 minutes.

Remember that when eating the fish, there will still be bones in it. Gently remind guests to eat with caution. Try different types of whole fish as well. Tilapia, red snapper or salmon all work well in recipes. When you do decide to pick up a piece of whole fish at your local fish market, make sure that it looks fresh. The eyes and skin should be shiny and bright.
