It's best to stay simple when you are trying to find different types of fish marinades. Some typical ingredients found in fish marinades are lemon juice, white wine, vinegar and salt and pepper. Other fresh herbs can be added to the mix for different flavors. It's best to let fish marinate over night for the best results.
White Wine Marinade
One popular fish marinade combines two cups dry white wine, two tablespoons lemon juice, two tablespoons brown mustard, two teaspoons salt, two teaspoons pepper and ½ teaspoon cayenne pepper. Combine all of the ingredients and let the fish marinate in the mixture in the refrigerator for about 12 hours.
This marinade is perfect for white fish fillets or shrimp. Take 1 ½ cups beer, ¼ cup olive oil, ½ teaspoon salt, one tablespoon powdered mustard, one teaspoon ground ginger, three tablespoons soy sauce, ¼ teaspoon Tabasco sauce, two tablespoons sugar, four tablespoons orange marmalade and two cloves minced garlic. Combine all of the ingredients and pour over the fish or shrimp. Marinate for at least two hours or longer before cooking.
Marinade for Grilling
If you want to grill your fish on a barbeque, try this quick marinade. It's similar to the white wine marinade above, but has just a few more ingredients. Take two cups olive oil, one cup dry white wine, four finely chopped shallots, two tablespoons soy sauce, two finely chopped cloves garlic and ½ teaspoon paprika. You can also add salt and pepper to taste. Combine the ingredients and pour it over the fish. Let it marinate for at least two hours before cooking.
Cooking fish the healthy way is not as hard as you might think. Fish is already good for you, and adding a few fresh herbs for taste eliminates the need for sauces that can add fat and calories.
