This crockpot meatloaf recipe is as easy to make as regular meatloaf. Because crockpots are slow cookers, crockpot meatloaf is an excellent choice for the working couple. Make the meatloaf mixture the night before, pop it into the crockpot in the morning before you leave for work and come home to a delicious meal.

The rule of thumb when converting oven recipes to crockpot recipes is quadrupling the time. If it takes one hour in the oven, it will take about four hours on high in a crockpot and about eight hours on low in a crockpot.

Crockpot Meatloaf Recipe
The following recipe works well in a crockpot and in an oven. To bake the recipe in the oven, make the meatloaf the same way. The only difference is that it will need to be cooked for about one hour and 15 minutes in an oven that has been preheated to 350 degrees Fahrenheit. If you are using a crockpot, cook it for 4 hours on high or 8 hours on low.

Meatloaf With Beans or Gravy
Ingredients You Will Need:
½ cup crushed seasoned croutons
6 Ritz crackers, crushed
1 cup milk
2 eggs, beaten
½ teaspoon salt
½ teaspoon pepper
1 large onion, chopped
1 ½ pounds ground beef
2 tablespoons Dijon mustard
2 tablespoons brown sugar
1 can pork and beans

Crush the croutons and crackers, and place them into the bottom of a large bowl. Pour in the milk, and mix well. Add the beaten egg, salt and pepper, and chopped onion. Mix thoroughly.

Place the ground meat into a separate bowl, and make a well in it. Slowly add the liquid mixture to the meat, and use your hands to squash it all together. When it has been thoroughly blended, make a circular meatloaf with a hole in the center all around the inside of the pot.

Mix the brown sugar and mustard together, and smear it over the top of the meatloaf. Then pour the beans into the center. Cover the pot, and turn the setting to low.

If you are not a pork and beans kind of family, use a can of beef gravy instead. Chop up an onion, and add one half cup of sliced mushrooms. Use the gravy to pour over hot meatloaf sandwiches. Another idea that helps keep the meatloaf from drying out and also gives the meat a nice tang is to omit the glaze and instead pour a can of stewed tomatoes over the top of the meatloaf, making sure the meatloaf is totally submerged. Toss a few parsley and thyme sprigs into the mix, and, during the last one or two hours of cooking, sprinkle a package of minute rice into the center of the meatloaf.

Tip: Not all crockpots are created equal. Newer versions tend to cook hotter than the older, original crockpots. Know your crockpot, and every meal you make in it will be spectacular.
