Begin with fresh, dry scallops (that have not been packed in brine). Do not use flash frozen scallops unless you absolutely have to. They have a tendency to be more rubbery than fresh scallops. If the fishmonger has not properly prepared the scallops, remove the tough crescent-shaped muscle from each scallop. Check the size of each scallop. If the individual scallops are bigger than two inches in diameter, cut them in half or slice each scallop horizontally before cooking.

Baked Scallops in Cream Sauce

Ingredients You Will Need:
2 pounds scallops
½ cup white wine or vino verde (cook with the same wine you serve for dinner)
½ teaspoons salt
6 tablespoons butter, divided in half
1 medium chopped sweet onion
¼ cup flour
½ cup panko bread crumbs

Heat oven to 400 degrees.

Pat scallops as dry as possible. Place in a baking dish.

In a small skillet, melt three tablespoons of butter. Cook onions in butter for a few minutes. Whisk flour into butter and onion mixture. Add salt, whisking continuously. Whisk wine into flour and butter mixture, cooking until sauce is slightly thickened.

Pour sauce over scallops in baking dish. Sprinkle panko bread crumbs over top. Drizzle three tablespoons of melted butter over top of bread crumbs. Bake in oven for 15 minutes or until top is slightly browned and scallops are just opaque throughout.

Ingredients You Will Need:
2 pounds scallops
6 tablespoons melted butter
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
½ teaspoon paprika
½ cup parmesan cheese
½ cup panko bread crumbs
½ cup shredded mild cheddar cheese

Heat oven to 400 degrees.

Pat scallops until as dry as possible. Place scallops in baking pan. Pour melted butter into baking dish. Combine salt, pepper, paprika, garlic powder, parmesan cheese and bread crumbs in a bowl and mix well. Sprinkle bread crumb mixture over scallops. Sprinkle cheddar cheese over bread crumbs. Bake for 15 to 20 minutes, until scallops are opaque throughout and topping is browned.
