How to Make Easy Pan Seared Sea Scallops

Seafood can be one of the most intimidating foods to cook. When not done perfectly, it can be a complete disaster. This is an easy scallop recipe that can be a great dish on its own or paired with a great cut of beef for a surf and turf dinner. This recipe is for 2 people, and makes for a great stay at home gourmet meal.

Items You will need: 

  • 8 large sea scallops washed
  • 2 cups cracker crumbs (Ritz for the best coating)
  • 1 tablespoon of each: garlic powder, parsley, basil.
  • 1/2 teaspoon of each: salt, pepper, paprika
  • 1/4 cup olive oil
  • 1/2 stick of butter
  • 1 ziploc storage bag
  • lemon wedges

Step 1
Heat olive oil and butter in large heavy skillet until butter is melted and hot. Be very careful not to over heat butter or cause the mixture to boil. Adjust the flame as necessary.

Step 2

Place all dry ingredients in ziploc bag. Close bag and shake 5-6 times to evenly distribute and make breading mixture. Make sure the spices are totally distributed through the crumbs.

Step 3

Place 2 sea scallops at a time in ziploc bag full of breading mixture. Close bag and shake to evenly coat the scallops. Do this for all 8 scallops. If breading is not sticking very well, rinse the scallops under some cold water before placing in the bag.

Step 4

Gently place scallops in hot oil and butter, careful to avoid splatter. Sear for about 4-5 minutes on each side. The scallops should be opaque but not solid white in the middle. Remove from heat and place on a plate covered with a paper towel to blot excess oil. Serve immediately. Garnish with your favorite seafood sauces or lemon if desired. A nice light white wine is an excellent pairing for this dish. Makes enough for 2 people.
