Ingredients You Will Need:
12 mini pita cups
2 tablespoons olive oil
3 tablespoons lime juice
1 small bunch lemongrass, coarsely chopped
10 medium fresh shrimp, peeled and deveined
1 cup fresh corn
Salt and pepper, to taste
To prepare the pita cups, split each in half horizontally. Brush tops with olive oil and bake at 350 degrees for about five minutes until crisp.
In a large bowl, mix the lime juice, lemongrass, shrimp, corn, salt and pepper. Heat a grill pan to medium-high and cook mixture for about 15 minutes. Let cool a few minutes and then spoon into pita cups.
