If you want the shrimp to absorb more of a flavor, marinate the shrimp before cooking it in a simple marinade or spice and oil rub.

Shrimp Curry Recipe

Ingredients You Will Need:
2 tablespoons of butter
2 minced cloves of garlic
2 teaspoons of peeled, minced ginger root
2 teaspoons curry powder
½ teaspoon coriander (ground)
½ teaspoon ground cumin
¾ cup cream or coconut milk
1 teaspoon salt
1 medium summer squash or eggplant, sliced
1 pound medium shrimp (cleaned, shelled and deveined)
½ teaspoon ground pepper
2-3 tablespoons chopped fresh cilantro

Make the curry sauce first by melting one tablespoon of butter in a saucepan and frying up the garlic, ginger root and spices in the butter. This releases the flavors. Add in the cream or coconut milk and salt. Let the sauce come to a boil, then reduce heat and let it simmer while you cook the eggplant or summer squash and shrimp.

In a skillet, melt the other tablespoon of butter. Sauté the summer squash or eggplant for three to five minutes. Add in the shrimp and pepper and sauté until the shrimp is cooked for about two to three minutes. Combine the curry sauce and the shrimp and vegetables. Garnish with cilantro.

Shrimp and Grits Recipe

Ingredients You Will Need:
3 cups shrimp stock made from shells
½ cup cream
1 cup quick cooking grits (not instant)
4 tablespoons butter
Pinch of salt
Pinch of pepper
1 pound of large shrimp (raw, cleaned, shelled and deveined)
6 slices of bacon
1 small onion, peeled and chopped
1 minced clove of garlic
2 tablespoons finely chopped red bell pepper (You can use a variety of colors of bell pepper for aesthetic appeal if you wish)

After shelling and deveining the shrimp, bring the shrimp shells to a boil in 3½ cups of water. Let simmer for five to eight minutes. Strain out shells. Use stock for recipe.

Cook shrimp stock, ½ cup cream and one cup of grits in a saucepan, bringing mixture to a boil. Add butter, salt and pepper. Simmer while cooking the rest of the meal, stirring occasionally.

Fry up six slices of bacon. Remove bacon from pan. Sauté the onion, garlic and peppers in bacon grease. Add shrimp. Sauté until shrimp is just cooked through.

Spoon grits onto serving plates. Top with shrimp mixture. Serve immediately.  Enjoy!
