Shrimp Pinwheels
Ingredients You Will Need:
¼ cup onion, chopped
¼ cup salted butter
1 tablespoon flour
½ teaspoon sea salt
1 teaspoon powdered garlic
1 16-ounce can diced tomatoes
1 cup rice, cooked
1 ½ cups shredded cheese
1 ½ cups shrimp, cooked
1 cup peas
2 packages refrigerator biscuits

Sauté the onion and shrimp in the butter until the onion is tender. Mix the flour, salt and garlic powder in a cup, and sprinkle the spices into the skillet. (Place a container of garlic powder and some crushed pepper on the table for the family so they can add more spice to their own dish.) Stir until the flour is blended. Add the tomatoes and rice, and stir until thickened. Add the cheese, and stir until it is completely melted. Fold in the shrimp. Finally, add the peas, being careful not to smash them. Remove from heat, and set aside.

Place the biscuits side by side on a floured surface, and dust flour across the tops. Use a rolling pin to flatten the biscuits into one large rectangle.

Pour the shrimp mixture onto the biscuit dough, and spread evenly to all corners. Starting from the longest side, roll up the biscuit dough into one large loaf. Cut the loaf into one-half-inch slices. (The slices will look like pinwheels.) Use a spatula to place the slices onto greased cookie sheets. Brush the tops with melted butter.

Bake the pinwheels according to the directions on the biscuit container. Since oven temperatures vary, check the biscuits every five minutes. When the biscuits begin to turn golden, it's time to remove them from the oven. Garnish with additional grated cheese.
