Turkey Pot Pie
Ingredients You Will Need:
3 cups ground turkey
½ cup onion, chopped
1 tablespoon canola oil
Salt and pepper
1 cup celery, chopped (include some leaves)
1 15-ounce can cream of mushroom soup
1 can sliced mushrooms
½ teaspoon paprika
½ teaspoon rosemary
½ teaspoon sage
½ teaspoon parsley
1 bag frozen vegetables
½ cup chicken broth
3 cups seasoned stuffing mix
Fry the ground turkey and onions in the canola oil. Salt and pepper to taste. Boil the celery until tender and the water has nearly all evaporated, and then dump the celery into a bowl. Reserve the liquid. Pour the cream of mushroom soup in the saucepan with the celery water, and cook until smooth. Drain the mushrooms, and add them to the soup. Stir in the spices. Start by adding only ¼ teaspoon of each spice, and taste after each addition. Spices are an individual taste preference. If you find you like the soup without all of the spice, don't add them all.
Add the frozen bag of vegetables, and cook for about 10 minutes. Add the ground turkey, and mix until well blended. Cook for another 10 minutes on low. Pour the soup into a casserole pan, and set aside.
Add the cooked celery and chicken broth, and mix in the stuffing mix. Mix until well coated. Spread the stuffing over the top of the casserole.
Bake for 20 minutes in an oven that has been preheated to 350 degrees Fahrenheit. Serve hot. If the mixture is too dry for your taste, serve with mushroom gravy.
