If you're strapped for time, you can still create some weeknight turkey breast recipes that won't take hours to prepare. When you are cooking turkey, make it on a Sunday, and save the leftovers to reinvent new turkey recipes later in the week. You can easily put together a small turkey breast dish right after a long day at the office.
Crock Pot Turkey
Before jetting off to work in the morning, take a turkey breast, and spread butter over both sides. If you don't want to use too much butter, try using a lighter spread. Then season with sage, salt and pepper. Place it in the crock pot, and pour about a half cup of water in the bottom. Let simmer on a low setting for about eight hours. Then remove the turkey from the foil, and slice it. Add a pinch of parmesan cheese on top.
Serve this with either a baked potato or sweet potato and some spinach. If you want some gravy, you can heat up a can of pre-made turkey gravy in a saucepan on the stove. Or, try using the homemade gravy juices from the crock pot.
Stuffed Ricotta and Spinach Turkey
Try jazzing up some plain turkey breasts by filling it with a ricotta and spinach mixture. You'll need a pound of washed turkey breasts to start with. For the ricotta mixture, you'll need one package of frozen spinach (thawed), ?" cup ricotta cheese, ½ teaspoon pepper and one egg white.
Next preheat the oven to 350 degrees. In a pan, combine one teaspoon of olive oil and four cloves of crushed, diced garlic. Let simmer for a minute, and add in the package of frozen spinach. Let sauté for another minute or two, and then take it off of the stove. Transfer the spinach into a bowl, and combine it with the remaining ricotta mixture ingredients.
Now take out a baking dish, and line the bottom with non-stick spray. Place the turkey breasts next to each other on the dish. Scoop a spoonful of the spinach ricotta mixture onto the turkey breast, and roll it up. Tie it together with a piece of string. Do this for the remaining pieces. Bake the turkey for about an hour or until browned.
Perfect Turkey Leftover Recipe
You can easily use turkey breast leftovers to make turkey roll-ups the next evening. Take a whole-wheat tortilla, a teaspoon of honey mustard, some fresh tomatoes, onions, lettuce and Swiss cheese. Take the tortilla, and spread the honey mustard over it. Slice the turkey breast, and add it to the tortilla, along with the remaining ingredients. Roll up, and serve with a pickle and a side salad.
