The cracked black pepper marinade is probably the mildest-flavored jerky marinade compared to many others. The pepper gives it just enough heat to satisfy heat seekers without being overbearing. The rest of the ingredients combine to offer a light touch of spice for those who are not big fans of herbs and spices.
This recipe is for a total of five pounds of sliced venison. If you are planning to make more than that, simply double the recipe.
Venison Jerky Marinade
Ingredients You Will Need:
1 cup of Worcestershire sauce
¼ cup of soy sauce
¼ cup of teriyaki
2 tablespoons of packed brown sugar
2 tablespoons of canning salt
3 tablespoons of finely ground black pepper
1 tablespoon of garlic powder
1 tablespoon of onion powder
1 teaspoon of Liquid Smoke
1 to ½ teaspoons of Morton's Tender Quick
Combine these ingredients in a bowl. Next, combine the marinade with the meat. Allow it to marinate no less than overnight. Ideally, you should leave the venison soaking in the mixture for closer to 48 hours. In order to make sure all of the meat is equally marinated, it is a good idea to rotate the venison every few hours. Finally, before drying the meat, you will want to season with cracked or coarse ground black pepper.
