A venison recipe can have dry, tough and gamey results, but they do not have to be this way. Try these two recipes for moist, tender, flavorful venison burgers.
Bacon Cheese Venison Burger Recipe
Ingredients You Will Need:
½ package bacon
½ teaspoon ground black pepper
1 pound ground venison
1 tablespoon butter
4 buns
4 slices Swiss cheese
Fry bacon in skillet until done to your liking. Set bacon aside; save grease. Mix pepper into two tablespoons of the grease; discard remaining grease.
Mix ground venison with two tablespoons of the bacon grease until well combined. Form ground venison into four quarter-pound burgers. Fire up grill; cook on medium high for three to four minutes per side, until venison is medium well done. About three minutes before venison burgers are done, butter buns and place on grill for one minute apiece, just long enough to toast buns. During last moment of cooking, place a slice of Swiss cheese atop each burger, and cover grill to melt cheese. Place burgers on buns; top with bacon. Serve immediately.
Hot and Spicy Venison Burgers

2 tablespoons beef fat (suet)
½ teaspoon salt
½ teaspoon ground black pepper
¼ cup minced onions
¼ cup minced jalapeños
4 buns
1 tablespoon butter
4 slices Monterey Jack cheese
Mix ground venison with two tablespoons of the beef fat, salt, pepper, onions and jalapeños until well combined. Form ground venison into four quarter-pound burgers. Fire up grill; cook on medium high for three to four minutes per side, until venison is medium well done. About three minutes before venison burgers are done, butter buns and place on grill for one minute apiece, just long enough to toast buns. During last moment of cooking, place a slice of Monterey Jack cheese atop each burger, and cover grill to melt cheese. Place burgers on buns; top with bacon. Serve immediately.
