3 medium tomatoes, chopped

4 lbs of beef shank
1 tablespoon butter
4 scallions, chopped
5 bell peppers, chopped
1 lb chorizo sausage, chopped
5 garlic cloves, finely chopped
1 can beer, your choice
Salt, pepper to taste
Puree the tomatoes, onions, oregano and paprika in a food processor. Put that into a heavy pot, and add the beef shank. Then, in a separate sauce pan, melt the butter, scallions, bell pepper, sausage and garlic. Cook until the sausage is brown. Add the sausage mixture to the pot holding the beef shank. Cover the works with beer, and add salt and pepper. Bring the mixture to a boil over medium heat, and then let it simmer uncovered for four to six hours. Taste continuously to see if you need to adjust the seasonings.
Spice It Up
For a true Texas chili recipe, you'll want to make it red hot. So just add in a few more key ingredients to the recipe above.
