White Chicken Chili Recipe

Try a homemade spicy white chicken chili recipe that's perfect for the slow cooker. Prepare the ingredients in the morning, and you'll have dinner ready to go by the evening. You can also make this white chicken chili in a large pot over the oven.

Recipe for White Chicken Chili
Ingredients You Will Need:
1 lb of chicken breasts, cooked and chopped into small pieces
1 cup onion, chopped
1 can chicken broth
2 cloves garlic, chopped
2 teaspoons cumin
3 cans white beans, drained and rinsed
1 cup chopped green peppers
Pinch of sugar
Salt, pepper to taste
Jalapeno chili peppers (optional)

You'll want to start this chili off by cooking the chicken, onions, chicken broth, garlic and cumin in the crock pot on low for about three to five hours. Next, add in the white beans. You can let this sit for another hour or so. Then, in the last hour of cooking, drop in the chopped red and green peppers, sugar, salt, pepper and the jalapenos. The jalapenos are of course optional, depending on how much spice you want in your chili. You can also add just a piece of jalapeno for a milder one, or several for a red hot white chili.

When serving the chili, top it with shredded Monterey jack cheese or crispy tortilla chips.

Tips and Variations
Try using cannelloni beans in particular for your chili. Also add in ΒΌ teaspoon of cayenne pepper for an extra kick if you decide not to use the jalapeno peppers.

If you want to cook it on the stove, take a saucepan, and heat up the onion and garlic with some olive oil. In a food processor, mix the beans and chicken broth together, and then stir that into your garlic/onion mixture. Add in your chicken and bring to a boil. After it has boiled, bring to a simmer for about 30 to 35 minutes.
