If you want to make an authentic Mexican meal for family and friends, be sure to include beef enchiladas. For this particular recipe, you can use either shredded beef or ground beef, depending on what you prefer. You'll have to cook these beef enchiladas in three parts: the beef, the enchilada sauce and the whole enchilada. You can make your own enchilada sauce or you can also use a store bought version, depending on how much time you have to whip up this classic Mexican dish.
Recipe for Beef Enchiladas
Ingredients You Will Need:
3 tablespoons vegetable oil
1 yellow onion, chopped
2 cloves of garlic, minced
1 ½ pounds of ground beef (or shredded beef)
Salt, pepper to taste
2 ¼ teaspoon ground cumin
1 tablespoon chili powder
1 cup tomato sauce
3 tablespoon oregano
Enchilada sauce (store bought)
Vegetable oil
1 dozen corn tortillas
12 ounces shredded cheddar cheese
First, you're going to want to prepare your beef and then set it aside in a bowl. In a medium skillet, drop in the vegetable oil, and sauté your onions and minced garlic. When they have been cooking for a few minutes, add the beef and some salt and pepper. Next, stir in the cumin, chili powder, tomato sauce and oregano. If you need to add in some water to lighten the consistency, then go ahead. Cook on a low simmer for about 10 minutes or so, stirring occasionally.
Now, you're going to want to heat up the enchilada sauce in a bowl and set it aside. Then take the vegetable oil, and pour it into a frying pan. Put the oil over medium heat, and check to see how warm it's getting. When it looks warm, but not scorching hot, take a tortilla and place it in the pan for about three minutes. Then flip it over. When they are nice and soft, dip the tortillas into the enchilada sauce. Your best bet is to use tongs while doing this.
Place your tortilla onto a tray. Then scoop some of the beef mixture right into the middle of the coated tortilla. Roll it up, place another layer of enchilada sauce on top and sprinkle everything with the cheddar cheese. Repeat this process for the remaining tortillas. When all of the enchiladas are complete, toss them into a preheated oven at 250 degrees for another 10 minutes or so just to warm them up.
Tips
You can easily prepare the beef ahead of time and refrigerate it before you decide to assemble the enchiladas. You can also make shredded beef enchiladas instead of the ground beef ones for a slightly different taste.
These enchiladas don't have any meat, but they are still hearty. Don't tell your family this recipe is vegetarian, and they'll never know the difference. |
