Easy Enchilada Recipes

You can easily master plenty of enchilada recipes. Filling options include cheese, veggies, ground or shredded beef, or chicken. You can also make the enchilada sauce from scratch, but you can save a ton of time if you decide to use the store-bought enchilada sauce.

Cheese Enchilada Recipe
An easy cheese enchilada recipe starts off with 12 corn tortillas. Take a small amount of vegetable or canola oil, and pour it into a frying pan. Put the oil over medium heat, and check to see how warm it's getting. When it looks warm, but not scorching hot, take a tortilla and place it in the pan for about three minutes. Then flip it over.

When they are nice and soft, dip the tortillas into the store-bought enchilada sauce. Your best bet is to use tongs while doing this. Make sure they are thoroughly coated in the sauce. Place the coated tortillas back on the baking sheet, and sprinkle a layer of cheese inside. You can use either a handful of mozzarella, jack or cheddar cheese. Then roll up the tortillas, and spread another spoonful of the enchilada sauce on top. Add one more sprinkle of the cheese. Repeat for the rest of the tortillas. Finally, bake the cheesy enchiladas in the oven for 15 minutes at 400 degrees.

Chicken Enchiladas
Another easy enchilada recipe includes chicken. You'll want to get about a pound of chicken breast to fill the enchiladas. Take the chicken, and grill it in a sauce pan for about 10 minutes or until cooked thoroughly. Then you'll want to cut up the chicken into bite-size pieces, and set aside.

Follow the steps for the easy cheesy enchilada recipe. But, when you have placed the coated tortillas back onto the baking sheet, spread a layer of chicken and cheese in the middle before rolling up.

Tips
If you don't like the store brands of enchilada sauce, try your favorite Mexican restaurant. Just ask them if they'll sell you a quart of their homemade enchilada sauce.

When serving the enchiladas, add a small scoop of sour cream and guacamole to the plate. If you are counting calories, use a fat-free sour cream and a low-fat guacamole.
