Creative Taco Recipes

By: Kristen Oliveri

The best part about making Mexican food is that you can get as creative as you want, especially with your taco recipes. You can switch up the type of tacos, fillers or toppings for yourself. For parties, you can even prepare a Mexican topping station filled with chopped tomatoes, shredded lettuce, olives, shredded cheese, scallions and sliced avocados. Then guests can then build their own unique taco.

First, you need to figure out your taco eaters' preferences. Do they like beef, chicken, fish or veggies? You can try tons of different combinations and fillers, so remember to be creative and experiment with new ones.

Beef: For the beef eater, staple fillers include ground beef or shredded beef. For a more authentic filler, try Carne Asada. Some beef fillings can be made in a slow cooker or a crock pot, like pulled pork. This puts a barbeque twist on your tacos. Try topping them with some barbeque sauce and sour cream. You can also use the taco meat and put it over a bed of lettuce for a taco salad. Garnish with tortilla strips.

Vegetables: Vegetarians should experiment with different roasted veggie fillers. Try sautéing eggplants, zucchini, onions and peppers in a medium-sized pan. Add in some olive oil and some freshly chopped garlic. Top the delicious veggies with some slices of tomato and avocado.

Fish: White, flaky fish like Tilapia and Mahi Mahi work well. Also try sautéing some shrimp in garlic and oil for a flavorful filling.

Shrimp and Chorizo Taco: If you don't mind mixing veggies, meat and fish together, here are some more creative taco recipes. For a shrimp and chorizo taco, sauté some shrimp in garlic and oil in a pan over medium heat. Cook for about 3 to 4 minutes on each side or until the shrimp is pink. Then remove the shrimp from the pan, and chop into small pieces. Then take some sliced chorizo, and sauté it in the pan with the leftover garlic and oil for about 5 minutes. When that's finished, combine the shrimp and chorizo in a small bowl. Scoop this taco mixture into a hard or soft taco shell.

Before having friends and family over, ask them which types of fillings and toppings they like. You can set up them up on a table, buffet-style and let guests dig into it themselves.
