Caramelized Carnitas

Don't tell your guests how easy these were to make and they'll think they took all day. The sweet and savory and this recipe play off of each other perfectly.

Caramelized Carnitas
Ingredients You Will Need:
1 ½ pound pork shoulder, cut into 1-inch cubes
Salt and pepper to taste
2 tablespoons brown sugar
1 tablespoon tequila
1 tablespoon molasses
2 garlic cloves, minced
½ cup chicken stock
½ bunch cilantro, leaves removed and roughly chopped

Season the pork with the salt and pepper and place in single layer in a large pan. Add the rest of the ingredients, except for the cilantro, and turn the heat to medium. Cook covered for about half an hour, or until the pork begins to turn tender. Remove the cover and cook until all the liquid has evaporated and the pork begins to caramelize, about another 10 minutes. Toss with the cilantro and serve.
