This slaw is a fun and different way to enjoy carrots. It's sweet and nutty, and less fattening than other slaws.
Carrot and Cashew Slaw
Ingredients You Will Need:
5 large carrots, peeled and shredded
½ gallon boiling water
½ Serrano chili, seeded and minced
1 lime, juiced
1 tablespoon honey
¼ cup roasted cashews, roughly chopped
5 sprigs cilantro, leaves removed and roughly chopped
Put the carrots in a colander and pour the boiling water over them. Allow to completely drain. Meanwhile mix the chili, lime juice and honey in a small bowl. Put the carrots in a large bowl and combine with the lime juice mixture and the rest of the ingredients. Let sit for at least five minutes before serving so the flavors can come together.
