Curried Cauliflower
Ingredients You Will Need:
3 tablespoons vegetable oil
2 cloves garlic, minced
1 head cauliflower, broken into flowerets
1 onion, chopped
1 inch piece ginger, peeled and grated
¼ cup water
1 teaspoon cumin, whole
1 teaspoon coriander, whole
2 tomatoes, peeled and chopped
½ teaspoon turmeric
¼ teaspoon cayenne
1 green chili, seeded and minced
1 lemon, juiced
Salt and pepper to taste
Heat the oil in a large pan over medium heat. Add the garlic and sauté until it begins to brown. Add the cauliflower and sauté for a few minutes. Meanwhile, put the onion, ginger, water, cumin and coriander in a food processor and puree into a paste. Remove the cauliflower from the pan and add the paste. Stir fry until it is aromatic and slightly darkens in color. Add the rest of the ingredients and sauté for about a minute. Return the cauliflower to the pan and cover. Let steam for about 10 minutes, stirring occasionally, until the cauliflower is tender. Serve over rice.
