Fennel Apple Salad
Ingredients You Will Need:
1 cucumber, peeled and seeded
1 Granny Smith apple, peeled and cored
1 fennel bulb, finely sliced
2 teaspoons lemon juice
2 tablespoons orange juice
2 tablespoons walnut oil (olive oil would also work)
1 tablespoon finely chopped fresh mint
1 tablespoon finely chopped fresh cilantro
ΒΌ cup toasted walnuts, roughly chopped
Finely slice the cucumber and apple and toss them in a bowl with the fennel and lemon juice. Mix the rest of the ingredients, except for the walnuts, in another bowl until they are combined. Pour the dressing over the salad and toss. Add the nuts and serve.
