Cherry Brioche Bread Pudding

Bread pudding is traditionally made with custard and topped with a rich sauce. This version uses yogurt so it's better for you but is still rich and delicious.

Cherry Brioche Bread Pudding
Ingredients You Will Need:
1 cup dried pitted cherries
½ cup raisins
3 eggs
¼ cup honey
1 ½ cups yogurt
1/8 teaspoon salt
8 slices brioche

Bring two cups of water to a boil and pour over the cherries and raisins. Let steep for at least 10 minuets. Meanwhile, beat the eggs with honey and then mix in the yogurt and salt. Tear the bread into bite size pieces and mix in with the wet ingredients. Drain the cherries and raisins and fold into the batter. Pour into a greased 5x7 pan and bake in a 400 degree Fahrenheit oven for about 40 minutes, or until it has set and is golden. Let cool before serving.
