French Onion Soup
Ingredients You Will Need:
¼ cup butter
6 onions, thinly sliced
1 tablespoon sugar
1 tablespoon all-purpose flour
2 sprigs thyme
1 cup white wine
4 cups beef broth
Salt and pepper to taste
6 ½-inch slices day old bread
2 cups grated Swiss cheese
½ cup grated parmesan cheese
Melt the butter in a large pot over medium heat. Add the onions and sugar and cover. Cook for a bout half an hour, stirring occasionally. Remove the top and cook for about 15 more minutes, stirring constantly, until they are deeply golden. Stir in the flour and cook for a minute more. Add the thyme and the wine and cook until the wine has almost completely dissolved. Add the broth and season with the salt and pepper. Bring up to a boil and simmer covered for about 15 minutes. Pour into six small ovenproof containers, such as coffee mugs, and top with a slice of bread. Cover each with the cheeses and place under the broiler in your oven. Broil for about two minutes, or until the cheese is golden and bubbly. Allow to cool for a minute or so before serving.
