Garlic Lamb Chops

If you get tired of cycling through beef, chicken and pork for dinner, try throwing a little lamb into the mix. This recipe with its meaty lamb chops and fresh flavors is the perfect way to get a little more lamb into your diet.

Garlic Lamb Chops
Ingredients You Will Need:
4 lamb loin chops, about 6 to 8 ounces each
3 cloves garlic, thinly sliced
1 bunch mint, coarsely chopped
½ bunch parsley, coarsely chopped
1 orange, zested
4 tablespoons olive oil
Salt and pepper to taste

Cut small slits in the lamb chops and fill with the garlic slivers, mint, parsley and orange zest. Season with salt and pepper, and place in an oven proof baking dish. Drizzle with the olive oil and cover the dish with aluminum foil. Bake in a 375 degree Fahrenheit oven for about 35 minutes. Remove the foil for the last five minutes in order to brown the chops. Serve with rice and a glass of red wine.
