One Week Pickles

You may think you like pickles but until you've tried the homemade kind, you've never had a real pickle. Sure you can get good ones in jars at the grocery store, but they don't pack half the punch that these do.

One Week Pickles
Ingredients You Will Need:
7 pounds medium cucumbers
1 quart apple cider vinegar
8 cups sugar

2 tablespoons salt
½ tablespoon mustard seeds
½ tablespoon black peppercorns
¼ tablespoon allspice
¼ tablespoon cloves
2 bay leaves

Put the cucumbers in a large pot. In a separate pot, bring enough water to cover the cucumbers to a boil. Pour over the cucumbers and let sit for 24 hours. Drain them and repeat the process for the next three days, making four cycles total. On day five, bring the rest of the ingredients to a boil and pour over the cucumbers. Repeat each of the next two days, making three cycles total. On the last day, transfer the pickles into sterilized jars and seal them. These pickles are great on sandwiches or just for snacking.
