
With summer comes an abundance of fresh and delicious tomatoes. Sometimes it seems like there are too many tomatoes and not enough ways to eat them. This recipe takes advantage of the sweetness of ripe tomatoes by using a lot of tangy lemon juice and a little bit of heat.
Summer Tomato Salad
Ingredients You Will Need:
6 medium tomatoes, cut into ¼ inch slices
¼ cup olive oil
1 lemon, juiced
5 sprigs basil, leaves removed and roughly chopped
¼ teaspoon cayenne pepper
Salt and pepper to taste
Spread the tomatoes out on a platter. Mix the rest of the ingredients in a bowl until they are well combined. Pour over the tomatoes and serve.
