Pistachio Sugar Cookies

The pistachios lend a deliciously nutty crunch to these soft sugar cookies. Serve with a tall glass of milk.

Pistachio Sugar Cookies
Ingredients You Will Need:
½ cup butter
1 cup sugar
1 egg
1 teaspoon vanilla
1 ½ cups sifted flour
1 teaspoon baking powder
¼ teaspoon salt
¾ cup chopped pistachios

In a large bowl using a hand mixer, cream the butter and sugar together until it lightens in color and becomes fluffy. Add the egg and vanilla and beat for another minute. Combine the flour, baking powder and salt, and add to the butter mixture. Mix to combine. Chill the dough for about an hour. Meanwhile, preheat your oven to 375 degrees Fahrenheit. When the dough is chilled, roll out on a lightly floured surface until its ¼ inch thick. Cut with cookie cutters and lay onto a cookie sheet. Top with the pistachios and gently press down so that they adhere to the cookie. Bake for five to eight minutes, or until they begin to brown. Allow to cool before eating.
