Take a break from the same old starches and try serving couscous. Though technically it is a pasta, it offers a flavor and texture all its own.
Spiced Couscous with Vegetables
Ingredients You Will Need:
2 ¾ cup chicken stock
3 teaspoons curry powder
1 teaspoon ground coriander
1 teaspoon garlic powder
½ teaspoon ground cumin
½ teaspoon ground ginger
¼ teaspoon cayenne
Salt and pepper to taste
1 cup uncooked couscous
1 carrot, sliced
¼ cup raisins
1 cup broccoli flowerets
1 cup canned chickpeas, rinsed and drained
In a medium sized pot, bring two cups of the chicken stock to a boil along with all of the spices and the salt and pepper. Once the mixture comes to a boil, turn off the heat, pour in the couscous and cover. Do not touch for at least eight minutes. Meanwhile, take the rest of the chicken stock and bring it to a boil with the carrots and broccoli, once they are tender, stir in the raisins and chickpeas. When the couscous is done steeping, fold in the vegetables and serve.
