Zucchini Banana Bread

Surprisingly, zucchini works amazingly in breads, cakes and cookies. With the additional sweetness from the banana and applesauce, this recipe is just about perfect.

Zucchini Banana Bread
Ingredients You Will Need:
2 eggs
1 cup apple sauce
2 teaspoon vanilla
2 cups grated zucchini
1 ½ cups sugar
1 ripe banana, mashed
2 cups all purpose flour
1 cup whole wheat flour
1 teaspoon baking powder
¾ teaspoon baking soda
1 teaspoon cinnamon
¾ teaspoon salt
½ cup toasted walnuts, roughly chopped
½ cup toasted pecans, roughly chopped
½ cup golden raisins
¼ cup dark raisins

Beat the eggs. Mix in the apple sauce, vanilla, zucchini, sugar and banana. Stir in the flours, baking powder, baking soda, cinnamon and salt, making sure not to over mix or the bread will be tough. Fold in the rest of the ingredients and divide the mixture between two greased loaf pans. Bake in a 350 degree Fahrenheit oven for about 45 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before eating.
