How To Make Hash Browns From Scratch

Hash browns are a favorite side dish, and they are not just for breakfast anymore. They are an easy potato recipe, requiring minimal preparation time and maximum enjoyment at the table.

Ingredients:

  • 3 or 4 large potatoes, or half a pound of smaller red potatoes
  • 1 green bell pepper, cored and seeded
  • 1 red bell pepper, cored and seeded
  • Canola oil
  • Butter or butter substitute (such as Healthy Balance)
  • Salt and pepper to taste

Preparation:

  1. Wash, peel, and grate potatoes.
  2. Chop the peppers into medium to large pieces. If a red bell pepper cannot be found, use two green peppers.
  3. In a skillet, add about a tablespoon of canola oil and a tablespoon of butter or butter substitute. Heat on low to medium for 4 minutes, then add the chopped peppers. Stir often, to ensure even browning. Add oil and butter or butter substitute if needed while the mixture cooks.
  4. When peppers are browned, put them in a bowl.
  5. In the same skillet, pour in enough canola oil to cover the bottom. Let it heat on low to medium for up to 5 minutes. Fill it with potatoes. If all potatoes will not fit, put as many as possible without overfilling.
  6. Add in all or up to two tablespoons of the chopped, cooked peppers.
  7. Mix in a tablespoon of butter or butter substitute. Stir the peppers into the potatoes. Pat the potatoes flat as they cook.
  8. Turn heat down if the potato pepper mixture is browning too fast.
  9. When the potatoes are cooked and adequately browned, turn off the burner and remove the skillet from the heat.
  10. The hash brown recipe is now ready to serve, whether for breakfast or dinner.

Potatoes are rich in vitamin C, so this easy potato recipe is a great way to get a serving of that most important vitamin, which does so much good for the body. The peppers add a dose of antioxidants, as well as great flavor.
