Ingredients You Will Need:
5 lbs Idaho potatoes
1 16-ounce container light sour cream
1 cup light mayonnaise
2 teaspoons spicy brown mustard
1 medium sweet onion, chopped
2 teaspoons salt
1 teaspoon fresh ground pepper
¼ cup shredded carrots
¼ cup flat leaf parsley
Boil the potatoes with the peels on. Let cool in the pot, and peel with a knife. Then, cut potatoes into small cubes, and pour into a large bowl. Add sour cream, mayonnaise, mustard, onion, salt, and pepper to the potatoes, and mix until ingredients are distributed throughout. Cover with plastic wrap and chill for 4 to 6 hours or overnight. Finally, garnish with shredded carrots and parsley before serving.
Variations
Add 1 hard boiled egg, ¼ cup chopped celery, ¼ cup bell pepper and 2 tablespoons of chopped pimento. If you want, use all, one or a few of these ingredients depending on taste. You could also try making potato salad by using other root vegetables, such as sweet potatoes or turnips, as your base.
Tip
As a great time saver, cook the potatoes in the microwave. You could even cook the potatoes the night before. Then refrigerate and mix the rest of the ingredients together the next day.
