Classic Broccoli Recipes

Broccoli recipes are simple to prepare and good for you. One cup of fresh broccoli supplies 100% of your vitamin C, 70% of your vitamin A and 30% of your fiber for the day.

When cooking broccoli, make sure you don't overcook it. You want to serve it soft to the touch, but firm inside. Like most vegetable recipes, these dishes turn out best if you use fresh broccoli as the main ingredient.

Classic Broccoli Bacon Salad
Ingredients You Will Need:
¾ cup mayonnaise
¼ cup white vinegar
2 tablespoons sugar
2 cups fresh broccoli, washed and cut into bite-sized pieces
½ cup bacon, cooked and crumbled
½ cup sliced grapes
½ cup shredded carrots
¼ cup sunflower seeds
¼ cup diced green onions

Combine mayonnaise, vinegar and sugar in a bowl, and mix well. Toss broccoli, bacon, grapes, carrot shreds, sunflower seeds and green onions in mayonnaise-based salad dressing. Cover broccoli salad with plastic wrap, and let salad sit in the refrigerator for at least two hours before serving to allow flavors to meld.

Easy Broccoli with Cheese Sauce Recipe
Ingredients You Will Need:
1 cup Velveeta cheese
1 tablespoon minced jalapeño peppers
¼ cup minced red bell peppers
2 cups fresh broccoli, washed and cut into bite-sized pieces

Heat Velveeta cheese and minced peppers in a small saucepan over medium heat, stirring continuously. The cheese should melt into a creamy sauce.

Bring water to a boil in a saucepan. Boil broccoli until just done, about five minutes. Broccoli should still be firm when pierced. Drain water from broccoli. Pour sauce over broccoli, and serve immediately.
