Broccoli and Cauliflower Salad Recipe
Ingredients You Will Need:
½ pound bacon
¾ cup mayonnaise
1 tablespoon white vinegar
1 tablespoon sugar
1 head cauliflower
1 head of broccoli
½ cup diced red bell pepper
¼ cup sliced green onions
¼ cup golden raisins
¼ cup sunflower seeds
Brown bacon in skillet over medium heat until bacon is crispy. Drain bacon; pat to remove excess fat. Crumble bacon into a mixing bowl. Combine bacon with mayonnaise, vinegar and sugar, and mix well. Set aside.
Wash, dry and chop cauliflower and broccoli into bite-sized pieces. Combine broccoli, cauliflower, red pepper, green onions, raisins and sunflower seeds with dressing, and mix well. Let salad sit in refrigerator for at least two hours so the flavors can meld. Serve within 24 hours of preparing salad. If desired, replace raisins with dried cranberries or apricots.
Roasted Cauliflower Recipe
Ingredients You Will Need:
1 large cauliflower
½ cup butter, melted
¾ cup Japanese breadcrumbs
½ cup shredded Parmesan cheese
½ cup shredded sharp cheddar cheese
1 teaspoon dried parsley
Wash, dry and chop cauliflower into bite-sized pieces. Line a baking dish with tin foil, and then fill baking pan with cauliflower pieces. Preheat oven to 400 degrees. Combine melted butter with breadcrumbs, Parmesan cheese, cheddar cheese and parsley. Press breadcrumb and cheese mixture on top of cauliflower pieces. Roast in oven for 20 minutes, until cauliflower is cooked through and topping is browned. This side dish goes well with Italian entrees, such as chicken Parmesan or veal.
