Ingredients You Will Need:
5 carrots
¼ cup orange juice
1 tablespoon honey
½ teaspoon dried marjoram

Wash, dry and peel carrots. Slice into thin coins or julienne pieces. Combine orange juice, honey and marjoram; mix until blended. Cook carrots and sauce in small saucepan on medium heat, mixing often, until carrots are cooked yet firm in the center, about five to seven minutes.

Ingredients You Will Need:
5 carrots
¼ cup apricot marmalade
¼ teaspoon fresh ground nutmeg
A dash of ground cloves
A dash of cayenne pepper

Wash, dry and peel carrots. Slice into thin coins or julienne pieces. Combine marmalade and nutmeg in a saucepan; heat over medium heat. Add carrot slices and cook, stirring often, until carrots are cooked through but still firm in the middle, about five to seven minutes. Sprinkle with ground cloves and cayenne pepper just before serving. The combination of sweet yet spicy enhances this dish.

Maple Syrup Glazed Carrots
Ingredients You Will Need:
½ cup crushed pecans
1 tablespoon butter
⅛ teaspoon cayenne pepper
5 carrots
¼ cup pure maple syrup

Toast pecan pieces with butter and cayenne pepper in a skillet on medium heat for three minutes, stirring often. Wash, dry and peel carrots. Slice into thin coins or julienne pieces. Add carrots and maple syrup to skillet, and cook over medium heat, mixing often, until carrots are cooked through but still firm in the middle, about five to seven minutes.
