Vegetable side dish recipes that are delicious and versatile are hard to find. Broccoli and Tomato Side Dish Recipe
Ingredients You Will Need:
1 tablespoon olive oil
1 clove garlic, minced
1 small onion, minced
? teaspoon salt
? teaspoon black pepper
½ cup shredded carrots
1 tablespoon pure maple syrup
3 cups broccoli florets, washed and peeled
4 Roma tomatoes, washed and sliced
¼ cup crumbled feta cheese
¼ cup flaked Parmesan cheese

Heat oven to 350 degrees Fahrenheit.

In skillet over medium heat, heat olive oil, garlic, onions, salt and pepper. Sauté onions and garlic until slightly browned. Add carrots and maple syrup, stir and cook until heated through, about two minutes.

Place broccoli florets and slices of Roma tomatoes in bottom of shallow baking pan. Pour sauce on top of broccoli and tomatoes. Sprinkle feta cheese and Parmesan cheese on top. Bake this broccoli and tomato side dish for 20 to 25 minutes, until cheese has browned. Serve hot, with a chicken, fish or pork main dish.

Eggplant Marinara Side Dish
Ingredients You Will Need:
1 large eggplant
2 Roma tomatoes
2 tablespoons olive oil
2 cloves garlic, minced
1 small onion, peeled and diced
Salt and pepper to taste
¼ cup fresh sweet basil leaves

Wash and pat dry eggplant. Slice eggplant into ¼-inch-thick slices. Wash, dry and dice tomatoes. In a skillet, heat olive oil over medium heat. Sauté garlic and onions in olive oil for a minute or two. Add eggplant and tomatoes, and sauté for three to four minutes, until eggplant is cooked through. Salt and pepper to taste, and add basil leaves one minute before finishing. Serve with Italian main dishes.
