Credit for the original Waldorf salad-which actually only contained apples, celery and mayonnaise-goes not to a chef, but rather to a maître d'hôtel. The dining room manager of the Waldorf-Astoria Hotel in New York City came up with this now classic salad, and it was an instantaneous hit. Today, Waldorf salads contain chicken, walnuts, cranberries and even raisins. Classic Waldorf Salad Recipe
Ingredients You Will Need:
½ cup mayonnaise (Make your own homemade mayonnaise for best results)
¼ cup sour cream
Juice from half a lemon
1 teaspoon honey
¼ teaspoon salt
2 red apples
2 Granny Smith green apples
1 stalk celery
½ cup walnuts
Combine the mayonnaise, sour cream, lemon juice, honey and salt in a bowl. Mix thoroughly.
Wash, core and slice the apples into bite-sized pieces, leaving the skins on the apple slices. Wash and dice the celery stalk. Toast the walnuts in a skillet with a smidgen of butter to bring out the flavor. Chop them into small pieces.
Combine the apples, celery and walnuts in a bowl. Add enough dressing to coat the ingredients lightly. Chill salad in refrigerator in a covered container for an hour. Serve salad on a bed of lettuce or greens.
Chicken Waldorf Salad
To transform this salad into a meal, grill lightly seasoned (with salt and pepper) chicken breasts. Chop chicken breasts into bite-sized pieces and add chicken to salad. Chill salad for at least an hour so chicken is thoroughly cooled before serving.
Cranberry Waldorf Salad
To give this salad either a sweet or tart zing, add in one of these two ingredients: fresh, coarsely chopped or dried sweet cranberries.
