You can find a simple hot and sour soup recipe, but it's still going to take some time to make. In fact, you might want to make the soup early and freeze it. Just leave out the tofu and egg. Then bring the frozen soup to a boil, and mix in the remaining ingredients.
A Simple Hot and Sour Soup Recipe
Ingredients You Will Need:
6 dried cloud ear mushrooms
6 dried Chinese black mushrooms
6 dried tigerlily buds
1 tablespoon peanut oil
1 tablespoon sesame oil
�" pound of lean boneless pork (or chicken)
4 to 5 cups chicken broth
1 tablespoon soy sauce (or light soy sauce)
1 square tofu, chopped
4 ounces fresh bean curd, cut into strips
¼ cup bamboo shoot, cut into strips
2 eggs, slightly beaten
2 tablespoons Chinese red rice vinegar
2 teaspoons green onion, thinly sliced
2 teaspoons sesame oil
1 teaspoon freshly ground white pepper
Start by putting the cloud ears, black mushrooms and tigerlily buds in a bowl, and pour boiling water on them. Let soak for about 15 minutes on the side. Then drain, and discard any woody parts of the mushrooms and buds. Set this aside.
In a large saucepan, heat the peanut and sesame oils. Then drop in your thinly sliced pieces of pork, and fry until the edges look crisp. Then stir in the broth, soy sauce, mushrooms and tofu. Next, throw in the bean curds and bamboo shoots. Bring the soup to a simmer, and add in the beaten eggs and stir thoroughly. Then remove the soup from the heat.
Mix in the vinegar, green onion, sesame oil and white pepper. For the adventurous, drop in a touch of chile oil. Before serving, you can adjust some of the flavors and add in a drop of extra soy sauce or a pinch of sugar if desired.
