How to Make Lasagna Soup

Ever heard of lasagna soup? Trust us: You should try it. The soup uses mini-lasagna noodles and Italian croutons to sop up the cheesy tomato flavor. It also includes all the major ingredients like ground beef, onion, diced tomatoes and mozzarella cheese. Try warming up guests for a winter dinner party by cooking lasagna soup.

Recipe for Lasagna Soup
Ingredients You Will Need:
1 lb ground beef
1 medium onion, chopped
1 zucchini, sliced
3 garlic cloves, chopped
5 cups water
2 cans diced tomatoes (with garlic and olive oil)
1 can tomato sauce
1 cups mafalda pasta uncooked (the mini-lasagna noodles)
1 tablespoon Italian seasoning
1 ½ cups Italian croutons
2 cups mozzarella cheese, shredded

Start by sautéing the beef, onions zucchini and garlic. When the meat is cooked and the onions look tender, drain any excess liquids. Then add in the water, diced tomatoes and tomato sauce. Then stir in the pasta and seasoning. Now you'll want to bring the mixture to a boil in order to cook the pasta. After about 10 minutes, lower the heat to a simmer.

Finally, pour the soup into a casserole dish, and garnish with croutons and mozzarella cheese. Broil the soup for about 10 minutes or until the cheese is melted. Top with a piece of fresh basil if you'd like. Serve it with a side green salad and some garlic bread.
