Extra Creamy Macaroni and Cheese

Making creamy macaroni and cheese is an art. All the ingredients must be of the same high quality, and they should be cooked together long enough to have time to blend. Otherwise, you won't achieve the velvety texture of a perfect mac-and-cheese.

Creamy Macaroni and Cheese Recipe
Ingredients You Will Need:
1 8-ounce box of elbow macaroni
1 8-ounce package of sharp cheddar cheese, shredded
½ cup parmesan cheese, grated
1 8-ounce tub of cottage cheese
1 8-ounce tub of sour cream
½ cup butter, melted
1 cup seasoned breadcrumbs
Sea salt
Freshly ground pepper
Parsley sprigs

Boil the macaroni, and salt the water. Boil the macaroni until tender. Drain, cover and set aside. In a 9- x 13-inch baking dish, mix the cheddar cheese, parmesan cheese, cottage cheese and sour cream together. When it's all blended, add the macaroni.

Meanwhile, mix the melted butter with the breadcrumbs. Press the macaroni into the pan, and spread the breadcrumbs over the top. Sprinkle a little pepper on the surface, and pop it into an oven that has been preheated to 350 degrees Fahrenheit. Bake for about 30 minutes. Serve with a spring of parsley on each plate.

Creamy macaroni and cheese goes well with fish and steamed vegetables. If you serve fish along with this dish, try to save time and energy by baking the rest of the meal as well.

For example, baked salmon with Italian dressing is a perfect accompaniment. Spread a piece of foil onto a cookie sheet, center the salmon on the sheet and spread lemon slices across the fish. Crimp the edges up to catch the Italian dressing as you pour about a cupful over the salmon. Pull up the foil edges, and crimp them together or add a second sheet over the top and secure. The fish will require about the same amount of time in the oven as the macaroni and cheese. Add a pan of homemade biscuits and you have a complete and hearty meal.
