Crock pot macaroni and cheese is not as easy to prepare as the regular boxed macaroni and cheese. However, the flavors of the macaroni and cheese blend beautifully in a crock pot. Just make the pasta ahead of time, and you are all set.
Crock Pot Macaroni and Cheese with Hotdogs
Ingredients You Will Need:
1 ¼ cups melted butter
1 8-ounce box of elbow macaroni
1 ½ cups milk
1 can evaporated milk
2 eggs, beaten
2 cups sharp cheese, shredded
2 cups hot cheese, shredded
Sea salt
Ground fresh pepper
6 hotdogs, cut into one-inch pieces
1 cup seasoned croutons
Coat the inside of the crock pot with butter. Melt the remaining butter either on the stove in a saucepan or in the microwave. Watch the butter carefully so it does not brown or burn. If melting it in the microwave, place a cover over the bowl to keep splatters down.
Cook the elbow macaroni in a large saucepan on the stove. Drain, rinse and set aside. Pour the milk and evaporated milk into the crock pot, and stir. Add the butter and the eggs. Pour the cheese into the crock pot, and stir until blended. Add salt and pepper, and then pour in the pasta and the cut-up hotdogs. Mix and cover.
Cook for two hours on high or four hours on low. Stir the macaroni and cheese several times during cooking. In the last hour, sprinkle the seasoned croutons on top.
To bring even more flavor to this cheesy dish, add different meats and vegetables. Hotdogs can be replaced by ham chunks or chunks of Polish sausage. Vegetables that go well with this dish include mushrooms, a bag of frozen peas, and green or red bell peppers. Use bell peppers sparingly, however, as this vegetable tends to dominate a dish.
