Easy Vegan Cake Recipes

Going vegan doesn't mean eating leaves and swearing off cake. In fact, many vegan cake recipes are just as delicious as cakes that use animal products. You may even have trouble telling the difference if confronted with a taste test.

The following are some easy-to-make vegan cake recipes that are bound to leave you wanting more.

Basic Vegan Cake Recipe
Ingredients You Will Need:
1 ½ teaspoons of an egg replacer
1 cup of rice milk
½ cup of pure maple syrup
2 teaspoons of apple cider vinegar
¼ cup of olive oil
½ teaspoon of vanilla extract
2 teaspoons of baking powder
¼ teaspoons of baking soda
1 cup of flour, all-purpose
½ cup of whole wheat pastry flour
¼ teaspoons of salt

Begin by preheating the oven to 350 degrees. Follow this by layering a 9-inch cake pan with a little of the olive oil and a sprinkling of the flour.

Next, combine the egg replacer, rice milk, maple syrup, vinegar, remaining olive oil and vanilla, and whisk until completely blended. Then add the dry ingredients: baking powder, baking soda, both types of flour and salt. Pour this batter into the cake pan, and bake for 30 to 40 minutes. Use a toothpick in the cake's center to test if it is done.

Vegan Chocolate Cake Recipe
Ingredients You Will Need:
1 cup of rice or soy milk
1 tablespoon of apple cider vinegar
A package of unsweetened cocoa powder
1 ½ cups of sweetener
1 ½ teaspoons of baking soda
1 �" cups of white flour, all-purpose
2 teaspoons of an egg replacer
¼ cup of water
1 teaspoon of vanilla extract
½ cup of soy margarine

Start by preheating the oven to 350 degrees and by layering two round cake pans with a little oil and flour.

Mix the milk and vinegar in a cup. Next, mix together the cocoa, sweetener, baking soda and flour. Once fully blended, mix in the egg replacer and water until the mixture is smooth in texture. You can now add the rest of the ingredients, and mix at a medium to high speed in an electric mixer. Once smooth in texture, pour the batter into the pans, and cook for 35 minutes or until finished.
