Delicious Fried Tofu Salad

Ingredients You Will Need:
10 thin triangles of firm tofu (already pressed and drained)
¼ cup flour
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon ground ginger
2 tablespoons olive oil
Plate of fresh greens and salad vegetables of your choice

Combine the flour, salt, pepper and ground ginger and mix well. Dip the tofu triangles into the flour and spice mixture. Let triangles absorb flour and spices for at least ten minutes. Top salad greens and salad vegetables with hot tofu triangles and drizzle with soy and ginger salad dressing.

Ingredients You Will Need:
3 tablespoons olive oil
½ pound block of firm tofu, drained and pressed
1 large can stewed tomatoes
1 small onion, peeled and finely chopped
2 tablespoons minced garlic
¼ cup fresh basil leaves, coarsely chopped
½ teaspoon salt
2 tablespoons sugar
½ teaspoon coarsely ground black pepper
1 teaspoon oregano
4 servings of pasta, cooked al dente and drained

In a skillet, heat olive oil. Add onion and garlic and sauté over medium heat until onion is tender. Crumble tofu into skillet and toss. Add tomatoes (and liquid from can of tomatoes) and spices and stir as sauce forms, being careful to keep tomatoes in chunks and tofu in chunks. Cook over medium heat (allow sauce to bubble) for ten minutes. Serve over pasta with a side of crispy bread.
