Making Vegan Cupcakes

Cupcakes rule. Just look into any bakery and you will see cupcakes standing front and center. Just because you are a vegan doesn't mean that you can't enjoy easy vegan cupcakes. In fact, the best vegan cupcakes can take on regular cupcakes any day.

Chocolate Vegan Cupcake Recipe

Ingredients You Will Need:
2 cups flour
1 cup cocoa powder
1 teaspoon baking soda
2 teaspoons baking powder
½ teaspoon salt
1 cup maple syrup
½ cup sugar
2 cups soy milk
½ cup canola oil or vegetable oil
2 teaspoons apple cider vinegar

Spray your cupcake pans with non-stick spray. You can also use paper liners if you choose.

Mix all of the dry ingredients in a bowl. Using an electric mixer or beater, combine all of the other ingredients in a large bowl at medium speed for two minutes. Add half of the dry ingredients and mix until well blended. Then add the rest of the dry ingredients. Mix for an additional minute.

Fill the cupcake pans about ¾ full and bake in a preheated 350 degree oven for 25 to 30 minutes.

Cupcakes are done when the tops spring back after being touched.

Makes 24 cupcakes.

Gingerbread Vegan Cupcake Recipe

Ingredients You Will Need:
2 ½ cups flour
6 teaspoons ginger
2 teaspoons cinnamon
½ teaspoon ground cloves
1 teaspoon baking soda
2 teaspoons baking powder
½ teaspoon salt
1 cup vegetable oil
2/3 cup light molasses
1 cup maple syrup
½ cup soy milk
4 tablespoons soy yogurt
½ cup crystallized ginger, finely chopped
3 teaspoons lemon zest, finely grated

Mix the dry ingredients until well blended. In a separate bowl, whisk together the wet ingredients until well combined. Blend ½ of the dry ingredients into the wet ingredients until well mixed. Blend in the remainder. Fold in the crystallized ginger and lemon zest.

Pour into prepared cupcake pans about �" full. Bake in a preheated 350 degree oven for 17 to 22 minutes.

Cupcakes are done when the tops spring back after being touched.

Makes 24 cupcakes.

These easy vegan cupcakes can be iced with your favorite frosting, sprinkled with powered sugar or eaten plain.
