If you want to add a twist to your regular veggie burgers, try creating a delicious eggplant veggie burger. Not only do eggplant burgers taste great, veggie burger recipes are classic dieters' specials because vegetables generally contain fewer calories than most meats-exactly what the weight conscious individual is looking for.

The eggplant comes in three different colors. The most common color is purple, but can also be found in a pale white and bright yellow. Eggplants block free radicals, have high blood cholesterol blocking properties and are a good source of folic acid and potassium.

Eggplant and Veggie Burgers Recipe

Ingredients You Will Need:
2 tablespoons olive oil
2 eggplant slices
2 meatless burgers
Mayonnaise
2 tablespoons chopped lemon thyme
½ teaspoon garlic powder
2 large onion slices
2 homemade marbled rye hamburger buns

Grill your meatless burger. Place the patties on your buns. Add the slices of eggplant to the top of the patties. Mix the thyme, mayonnaise and garlic powder together and use as a hamburger sauce. Top with the onion slices and serve.

Eggplant and Black Bean Burgers Recipe

Ingredients You Will Need:
½ onion, minced
1 can black beans, drained and mashed
½ cup eggplant, cubed and mashed
½ cup flour
1 cup seasoned croutons, crushed
Rosemary
Garlic powder
Onion powder
Sea salt
Ground pepper
Olive oil

Use a food processor to mix all ingredients, except crushed croutons, until smooth enough to form into patties. Form patties and roll them in the crushed croutons. Place the patties into the freezer for one hour. Pan-fry and serve immediately.
