Veggie Burger Recipes
Some of the best veggie burgers incorporate several different vegetables at the same time, such as eggplant and zucchini or mushrooms and onions. That doesn't mean that all veggie burgers are created the same. Indeed, some veggie burgers come equipped with more spices, while others are plain, but also appear to have a taste sensation of their own.

Ingredients You Will Need:
3 tablespoons oil
1 ½ pounds assorted edible mushrooms
½ cup sweet onion, minced
4 cloves garlic, minced
?" cup rolled oats
?" cup Parmesan, shredded
¾ cup breadcrumbs
2 eggs, beaten
1 tablespoon chopped fresh oregano
1 teaspoon dried parsley flakes
Freshly ground pepper
Combine the following ingredients in a large bowl and set aside: oats, cheese, breadcrumbs, spices and breadcrumbs. Mix well and set aside. In a large skillet, heat about half the oil. When the oil is hot, add the mushrooms, onions and garlic and cook for about ten minutes. Mushrooms generally release liquid so make sure you cook them until they have done so. When the mushrooms have released their liquid and are beginning to brown, remove them from the heat and add them to the bowl.

For another variation, try adding some hot sauce. Start with one small jalapeno or one small Hungarian pepper. Mince the hot pepper in a food processor to protect yourself from being burned by the fumes.
