
Soy foods can be an important part of vegetarian cooking, and soy burgers in particular are easy to make. They are as hearty as meat burgers, and they can be a regular dish in your vegetarian diet.
Soy Bean Cooking Preparation

3 cups vegetable stock
1 cup soy beans

1 cup cooked soy beans
½ cup cooked brown rice
1 egg, beaten
¼ cup tomato puree
1 small onion
1 teaspoon savorex
½ teaspoon salt
½ cup bread crumbs
1 tablespoon olive oil (to coat pan)
8 whole-wheat buns
Soak your soy beans in water overnight. Consider soaking more than you need and freezing the leftovers for future meals. Then cook your beans in a pot with the vegetable stock and water. Bring the pot to a boil, and simmer about 2 ½ hours until cooked.
Grind or mash your soy beans. Then add all the other ingredients to them in a large bowl. Form your mixture into well-rounded patties with your hands. Place the patties on a baking sheet lightly greased with olive oil, and bake for 30 minutes at 375 degrees. Remove from the oven, and place on a toasted whole wheat bun.
Variations
Of course you could take the same patties and fry them up in a skillet. Just remember to coat the pan with olive oil, and sauté until nice and crisp, about five minutes on each side.
