Quick and Easy Party Appetizers

Party snacks don't have to be complicated to be tasty. Try these quick and easy party appetizers, and wow your guests without breaking a sweat:

Asparagus Roll Ups

Ingredients:

  • Asparagus spears
  • White bread (one slice per spear)
  • Butter
  • Onion, finely chopped

Preparations:

  1. Cut the crust off of the bread, and flatten with a rolling pin.
  2. Then, mix two tablespoons of butter with a tablespoon of onion, and use it to butter one side of each slice to taste.
  3. Roll the asparagus spears up in the bread (buttered side facing in).
  4. Melt two tablespoons of butter, and brush onto the rolled spears.
  5. Bake at 350 for 12-15 minutes or until golden brown.
  6. Serve alone or with your choice of dipping sauces.

Cheese and Cherry Won Tons

Ingredients:

  • Cream cheese
  • Cherry pie filling
  • Won Ton Wrappers
  • Egg white from one egg
  • Cooking oil

Preparation:

  1. Lay a won ton wrapper on your work surface.
  2. Fill with one teaspoon of cream cheese, and top with a teaspoon of cherry pie filling.
  3. Then, brush egg white around the edges of the wrapper, and gather up the edges to form a pouch.
  4. Fry in hot oil at 365 degrees until golden brown--about 3 minutes.
  5. Remove, and place on a plate covered with paper toweling.
  6. Allow to cool slightly. Then, serve while still warm.

Sweet Potato Chips

Ingredients:

  • Peeled sweet potatoes
  • Cooking oil
  • Salt
  • Ice water

Preparation:

  1. Use a mandoline or box grater to cut the sweet potatoes into 1/8-inch thick slices.
  2. Soak in ice water for an hour to remove some of the starch.
  3. Then, remove from the water, and dry thoroughly.
  4. Fry in hot oil (365 degrees) until golden brown.
  5. Remove with a slotted spoon, and place on paper toweling.
  6. Salt and serve with blue cheese dressing, ketchup or your choice of sauces.

For fat-free chips: Place the sweet potato slices on cookie sheets, and bake at 200 degrees for 45 minutes, flipping halfway through.

Mini Soft Tacos

Ingredients:

  • Cooked ground beef or beans
  • Lettuce
  • Tomatoes
  • Shredded cheese
  • Salsa
  • Avocado
  • Flour tortillas

Preparation:

  1. Use a biscuit cutter or circular cookie cutter to cut the full-size tortillas into a bunch of mini tortillas.
  2. Then, fill each mini tortilla with cooked ground beef or beans, lettuce, tomato, avocado, shredded cheese and salsa.
  3. Hold together with a toothpick, and serve.
