Party snacks don't have to be complicated to be tasty. Try these quick and easy party appetizers, and wow your guests without breaking a sweat:
Asparagus Roll Ups
Ingredients:
- Asparagus spears
- White bread (one slice per spear)
- Butter
- Onion, finely chopped
Preparations:
- Cut the crust off of the bread, and flatten with a rolling pin.
- Then, mix two tablespoons of butter with a tablespoon of onion, and use it to butter one side of each slice to taste.
- Roll the asparagus spears up in the bread (buttered side facing in).
- Melt two tablespoons of butter, and brush onto the rolled spears.
- Bake at 350 for 12-15 minutes or until golden brown.
- Serve alone or with your choice of dipping sauces.
Cheese and Cherry Won Tons
Ingredients:
- Cream cheese
- Cherry pie filling
- Won Ton Wrappers
- Egg white from one egg
- Cooking oil
Preparation:
- Lay a won ton wrapper on your work surface.
- Fill with one teaspoon of cream cheese, and top with a teaspoon of cherry pie filling.
- Then, brush egg white around the edges of the wrapper, and gather up the edges to form a pouch.
- Fry in hot oil at 365 degrees until golden brown--about 3 minutes.
- Remove, and place on a plate covered with paper toweling.
- Allow to cool slightly. Then, serve while still warm.
Sweet Potato Chips
Ingredients:
- Peeled sweet potatoes
- Cooking oil
- Salt
- Ice water
Preparation:
- Use a mandoline or box grater to cut the sweet potatoes into 1/8-inch thick slices.
- Soak in ice water for an hour to remove some of the starch.
- Then, remove from the water, and dry thoroughly.
- Fry in hot oil (365 degrees) until golden brown.
- Remove with a slotted spoon, and place on paper toweling.
- Salt and serve with blue cheese dressing, ketchup or your choice of sauces.
For fat-free chips: Place the sweet potato slices on cookie sheets, and bake at 200 degrees for 45 minutes, flipping halfway through.
Mini Soft Tacos
Ingredients:
- Cooked ground beef or beans
- Lettuce
- Tomatoes
- Shredded cheese
- Salsa
- Avocado
- Flour tortillas
Preparation:
- Use a biscuit cutter or circular cookie cutter to cut the full-size tortillas into a bunch of mini tortillas.
- Then, fill each mini tortilla with cooked ground beef or beans, lettuce, tomato, avocado, shredded cheese and salsa.
- Hold together with a toothpick, and serve.
