Festive Christmas Brunch Recipes

By: Helen Polaski

Good Christmas brunch recipes are worth waking up to. Families like to sleep late on the holidays, so a comforting brunch is an ideal way to start the festivities.

Brunch is served at about 10 in the morning and can last well in the early afternoon. How long your meal lasts depends on you and your guests. If you have a crowd who likes to mingle, place board games and a few decks of cards in plain view. Once they've finished eating, guests can take part in the games.

Christmas Holiday Brunch Foods
Because it's a holiday, you'll naturally want to show off some of your favorite holiday recipes-especially desserts-but don't forget main dishes, such as peanut butter pancakes with honey butter and French toast cheese sandwiches. Even more festive brunch ideas include making bacon bundle appetizers and serving mimosas while you enjoy good company and lively conversation.

Peanut Butter And Honey Pancakes
Ingredients You Will Need:
1 cup warm honey
3 tablespoons salted butter
Green food coloring (optional)
Pancake mix
Red food coloring (optional)
½ cup peanut butter chips

Warm the honey in a saucepan over low heat. Melt the butter into the honey. Add green food coloring if you choose. Keep warm. Mix the batter according to the directions on the box. At this time, add enough red food coloring to create a red batter. Once the batter has been poured into the pan, sprinkle about six to eight peanut butter chips into the pancake. Make sure the chips are spread out. When the pancakes are done, flip them into a stack, and serve with the butter.

French Toast Cheese Sandwiches
Ingredients You Will Need:
3 to 4 eggs
½ cup milk
½ cup sugar
2 tablespoons vanilla
1 tablespoon cinnamon (optional)
1 loaf stale French bread
Butter
12 slices cheese
24 slices of bacon, cooked and drained
24 sausage links, fried and drained
Scrambled eggs (optional)
Food coloring (optional)

Mix the eggs and milk together in a deep pie pan. Add the sugar, vanilla and cinnamon, and mix until well blended. Dip one slice of bread at a time into the egg mixture, coating both sides. Fry the bread in a hot pan with just enough butter to keep it from sticking. When the bread is done on both sides, make a sandwich with 1 or 2 slices of cheese and either 2 slices of bacon or 2 sausage links. The heat from the bread is enough to seal the sandwich together.

For a particularly cheesy sandwich, use two slices of cheese. Canadian bacon also works well. This sandwich is also tasty when scrambled eggs, dyed with red or green food coloring, are added as additional filler. For an alternative, try serving these as open-face sandwiches.

Bacon Bundles
Ingredients You Will Need:
24 slices bacon, cooked and cooled
12 slices cheese
12 sausage links, cooked and still warm

Place the bacon on a flat surface, and cut a strip or two of cheese to fit the length of the bacon. Place ½ link of sausage on the end, and begin rolling it up in the bacon. Once the bacon bundle is completely rolled, secure it with a festive toothpick.
